Easy as Pumpkin Pie Breakfast
My love of all things pumpkin is pretty obvious. It makes breads moist and colorful, it lends itself beautifully in hearty soups paired with sage, and of course nothing compares to the delicious custard filling of pumpkin pie. A few Christmases ago I received a waffle iron and it’s perfect for making fast breakfasts, but you can easily use this recipe for pancakes as well. I cheat; I use complete pancake mix, but adding hidden ingredients like cinnamon and pumpkin makes for an extra-special breakfast treat.

Pumpkin Applesauce Waffles
Serves Two
1/2 Cup Complete Pancake Mix
1/2 Cup Water
1/2 Cup Pumpkin Puree
1/4 Cup Applesauce
1 tsp Cinnamon
Mix all ingredients, adding more water or mix if necessary. Pour 1/2 Cup of batter on the waffle iron and bake until golden brown. Serve with butter and maple syrup.
